Terry, owner of Gyros & Goodies, coined the term souvlaria, a portmanteau of souvlaki and cafeteria that describes the casual atmosphere and the cuisine of the restaurant. The cooks prepare Greek fare in the kitchen, slicing thin ribbons of gyro meat from a rotisserie and baking pans of moussaka, a layered dish of potato, eggplant, seasoned ground beef, and béchamel sauce. Sips of creamy frappes, made from Nescafé coffee, ice, milk, and sugar like an overly complex snowman, accompany baklava and greek yogurt with sour-cherry preserves.
