It might look like a forbidding stone temple from the outside, but inside you'll find nothing but Jimboy's signature parmesan-dusted tacos and super burritos crammed with guacamole, olives, tomatoes, and sour cream. These rib-stickers have been stuffing stomachs from the restaurant opened as an old-fashioned food trailer in 1954. But it was when Jimboy got up the capital to put down more permanent roots in 1958 that they really began to branch out, and today they still offer free chips and salsa with every order.
