Aji 53 Japanese Cuisine's owner Chef Ken has perfected his hands-on approach to making sushi through his 17 years of experience behind the sushi knife. Today, he treats guests to a sumptuous dining experience, starting with the decor. There's rich textured wallpaper, and the clean lines of the padded seating and cobalt blue uplighting give the place a modern feel, much like covering a wall with motherboards.
Aside from the traditional maki rolls, the sushi chefs craft some unexpected dishes: For the salmon tostada, raw salmon sits on a baked tortilla with housemade guacamole, and for the ocean river, salmon enfolds lobster and avocado. There are also hot entrees, with options such as broiled chilean sea bass served with mashed sweet potatoes.
