After cooking a batch of brownies at her bakery, Sheila G. Mains had a habit of nibbling at the pieces left over on the pan. She soon had a revelation: she favored these crunchy leftover pieces over the brownies themselves. After this, Sheila created a technique by which she could bake these cookie-like pieces, which she called brownie brittle. The brittle now comes in walnut, toffee, and chocolate-chip flavors. It has since proved popular with Hollywood’s caterers, too—Brownie Brittle has been a featured dessert for the sweet-toothed celebrities at the 2013 Golden Globes, the after party for the premiere of Silver Linings Playbook, and the Senate inauguration of Cookie Monster.
