Inside of Red Hen, an Old Saybrook bistro that opened in late 2012, plates of Mediterranean-inspired risotto and tagine share table space with American classics such as southern fried chicken with slow-cooked collards. Chefs thoughtfully choose the ingredients for these dishes, taking care to procure free-range chicken and sourcing Stonington sea scallops from nearby Little Narragansett Bay.

Diners tuck into comforting, yet upscale entrees such as butternut-squash risotto with mascarpone or mustard-glazed pork porterhouse with maple-walnut sweet-potato purée.
