Assaggio's chefs specialize in Northern Italian cuisine, but, like many culinary artists, their inspiration comes from far and wide. They craft a menu that includes hints of all their influences. Diver scallops soak in a madeira cream sauce over pappardelle noodles—an Old-World favorite—while pan-blackened Chilean sea bass comes over a bed of picked lobster risotto. The chefs make gnocchi and ravioli from scratch and saute chicken with mushrooms and fire-roasted peppers before adding gorgonzola cheese and a hint of cream. Nightly additions are also added to the menu, which could include anything from fresh seafood to prime beef cuts or the hair plucked from an angel's head.
