Unagi: Sushi's Slithery Summer Treat

Twisted together in tanks, their bodies shining in silvery tangles, unagi—freshwater eels—are about as pliable as sea creatures get. But out of the tanks is where their flexibility really shows: cooks pull them from the water to grill over charcoal, batter in tempura, steam, or roll into sushi. Some restaurants import eel from Japan, where it is prized for its sweet, earthy flavor and bounty of B vitamins.

Unagi refers not to a specific species but rather to freshwater eel in general. In Japan, it’s consumed heavily in the summer—when eels grow fat and meaty, perfect for cooking with unagi sauce—and in particularly massive volumes on the Day of the Ox. The exact provenance of that tradition is unclear, but for several hundred years, Japanese chefs have been overwhelmed by demand on the midsummer holiday.

Ninja Sushi's maki have always boasted an elegant presentation, sailing to tables on boat-shaped platters bedecked in plant garnishes, candles, and colorful sushi pieces on every horizontal surface. Now, after four months of renovations, the owners can say the same of their decor. They appointed their dining room in warm, earthy tones, perfectly complemented by a splash of red paint behind the white stone sushi bar. Of course, they still whip up impressive cargos of sushi to put on their boat platters, alongside with Japanese and Korean kitchen entrees which come on more traditional plates, which are the flatware equivalent of river barges.
