As Seville Tapas tells it, the word "tapas" goes back a long time. Spanish for "lid" or "top," it's thought to refer to the days when sherry was served with slices of bread used to keep fruit flies or shrunken barflies from getting into the glasses. In that tradition, you'll find freshly baked bread throughout most of Seville's menu. Read on to see the many ways you can enjoy it:
With charcuterie: Bread accompanies all four of Seville's spreads, including a cured-meat sampler with chorizo and jamón ibérico and a cheese platter with quince paste and the restaurant's signature five-pepper jam.
Dunked in soup: You'll be able to sop up every last trace of lobster bisque or chorizo-lentil soup with a side of regular or gluten-free bread.
On a sandwich: Pepitos, Spanish–style mini sandwiches, are Seville's specialty. There are more than 40 varieties, from smoked salmon to goat cheese with tapenade, all served on fresh baguettes.
As dessert: Flan, house-made GF- and dairy-free Santiago almond tortes, and sweet pepitos, such as Nutella, raspberry jam, and peanut butter are served alongside a variety of Spanish Torrefacto coffees.
