The Grilled Cheese Experience
Based on the simple concept behind The Grilled Cheese Experience, it'd be easy to assume that owner Josh is an entrepreneur with a really good idea, but only mild talent behind the stove. But as the famous saying goes, when you assume things, you make an error sometimes. In fact, Josh began his culinary journey in one of the first farm-to-table restaurants in the country, going on to hone his craft in foodie havens such as New Orleans and San Francisco before branching off on his own. By the time he moved to Seattle to set down his culinary roots, the recession struck and many people simply didn't have the funds for fancy meals. Not wanting to abandon his love of creative gastronomic twists, Josh adapted and put together an idea that was at once simple, inventive, and affordable: gourmet grilled cheese sandwiches made with his own homemade breads.
Today, he and his food truck cruise around town serving up creative sandwiches made with the likes of gruyere, apple chipotle cheddar, and triple cream gorgonzola. Despite the name, cheese isn't the only star between the buns. He also ropes in locally sourced meats—think honey-cured ham, slow-smoked boneless ribs, and house-smoked bacon—and sauces ranging from bourbon molasses barbecue to blackberry balsamic reduction. And what better to go with grilled cheese sandwiches, albeit nontraditional ones, than sides of tomato soup and grilled mac 'n' cheese.
