Usagi House's Chef Frenbin takes a broad view of classic Japanese cuisine, having studied the flavor harmonies found around Asia. He incorporates creative ideas and unusual flavors into his small plates, sushi rolls, and entrees. The almost deconstructed Smash roll, for instance, features pan-fried crab mix over a bed of cabbage, which is then topped with grilled beef, avocado, and teriyaki sauce. Other unexpected dished include curry chicken; the Spider Nest, a fried softshell crab perched atop housemade french bread and covered with honey aioli; and the signature dish, the Bone Yard, which combines slow-cooked ribs and oxtail with sweet cabbage in a flavorful broth.
