    The Three Faces of NW Peaks Brewery The Brewing Mountaineer Since graduating from the University of Washington with a doctorate in molecular biology, Kevin Klein’s applied his scientific prowess to one of his favorite pastimes: beer brewing. The dedicated homebrewer’s other favorite pursuit, mountaineering, inspired the brewery name, which pays homage to the peaks surrounding Seattle. Each beer, meanwhile, borrows its moniker from an actual peak climbed by Kevin. Brews even arrive with a description of Kevin’s climb and an explanation of how they compliment the peak. Two Beers a Month Due to the nanobrewery’s small setup, every batch yields less than one barrel. What NW Peaks lacks in quantity, however, it makes up for in quality. While Kevin occasionally repeats select pours, such as the fruity Challenger IPA, he mostly handcrafts two new beers every month. Often reflective of the season, these have run the gamut from summertime ales spiced with New Mexican hatch chilli peppers to wintry stouts spiked with espresso from Seattle Coffee Works. Suds for Subscribers Though available at select Seattle bars and in NW Peaks' own taproom, the brewery primarily distributes beers to its mountainBeers subscribers. It opened some 15 years after company owners Todd Carden and Brett Norton established the original location in 1997. Here are a few tips to keep in mind when you visit this popular Lake City destination. The kitchen incorporates beer into the food. Favorites include the cherry-stout-barbecue elk burger, which also features caramelized onions and a house sauce. More than a dozen gourmet burgers anchor the menu. However, you can substitute the Black Angus beef with a number of other healthy options, including house-marinated portabella-mushroom caps, ground turkey, or vegetarian patties. The buns are baked fresh. Not only that, they’re made from spent grain from the company’s breweries. This is just a small example of Elliott Bay’s sustainability efforts. Kids are welcome. Just because the word “brewery” is in the restaurant’s name doesn’t mean tykes are out of luck. In fact, they have their own menu full of pint-size eats. It can get loud at times. Between the music and a seating capacity of 250 guests, this is not the best place to read a book while eating.
