Classic preparations of Italian culinary comforts have been the mission at the family-run Provesi Ristoranté for 20 years, during which the kitchen staff has mastered cooking styles from all regions of Italy. Both its veal scallopini and chicken breast, for example, can be ordered in eight or nine different styles respectively, including parmiagiana, francese, and milanese. Elsewhere in the kitchen, margherita, white, and quattro-stagioni pizzas are prepped in a brick oven, and shellfish and linguini are tossed in the zuppa di pesce’s fra diavolo sauce. As the amply portioned dishes arrive at tables, the wait staff uncork bottles of wine that diners bring from home. A wood-paneled wall reveals an opening into the kitchen, and a stairway leads to the downstairs room, where stonewalls and brick beams surround the long tables that facilitate private dining events.
