"So this Rachel called and she wants to come to the farm. Typical city slicker," said Jerry. He'd been raising cows in Michigan since the age of 13, and when restaurant-industry professional Rachel pulled up to the farm and approached him with a business proposal, Jerry was not convinced—at first. But once he saw that she was serious, the two partnered up to create Monty's Beef Company, providing customers with steaks they can cook at home.
And it had to be Jerry. Rachel wouldn't settle for anyone else because he is one of the only stateside cattle raisers who specializes in the Italian Piedmontese breed. Originating in the Italian Alps, Piedmontese beef has been a staple in the people of this region's diet due to its lean properties and tender texture. Piedmontese is the only beef recognized by the American Heart Association as being heart-healthy, with cuts boasting less fat and cholesterol than chicken, fish, and invisible celery. But being heart-healthy doesn't mean this cut lacks flavor. In fact, this cut maintains its rich flavor and tender texture even with the heart-healthy advantages. Furthermore, Jerry raises the cattle to eat an entirely vegetarian diet, and in his own words, he doesn't add any "antibiotics, growth hormones, or garbage."
