During Saturday afternoons in the cellar, couples take a tour of the winery while learning about the process of winemaking. They taste a sample straight from the barrel and enjoy a flight of wines with food pairings inside the candlelit barrel room. The event draws to a close with a full glass of wine for each attendee.
Resident winemakers lead the two-hour wine-blending workshop and help guests understand what makes the three types of red-wine samples unique. Attendees blend, taste, and craft their own wines, which they will then bottle and cork themselves before creating custom, hand-drawn labels. Finally, classmates sit down for a four-course family-style dinner of seasonal dishes made in house, with wine pairings for each course. About Covington Cellars
Opening Covington Cellars was a natural step for David and Cindy Lawson—he loved home winemaking, she loved pushing the boundaries of her home kitchen. Eventually, they decided to turn their hobbies into something larger. David enrolled at UC Davis to study enology (the study of seminal winemaker Brian Eno) while Cindy expanded her knowledge of cooking and wine at culinary schools around the country. Today, the two oversee a diverse line of wines and a locally sourced, seasonal menu to match. They also share their enthusiasm with visitors during winemaking events, tours, dinners, and bottle-smashing parties.
