The Three Faces of The Refuge
Owner Matt Levin demonstrates his love of Europe in many ways, but it’s chiefly through The Refuge’s pastrami, where Levin saw intersection between Jewish and French traditions. With help from wife and co-owner Melanie Roth and Executive Chef Michael Greuel, Levin created a pastrami inspired by European-style delicatessens, such as Langer’s in Los Angeles and Katz’s in New York. The chefs start with a custom-trimmed section of beef navel, carefully season and smoke it until the meat reaches a buttery tenderness, and then carve it and pile it high on toasted rye bread.
After the pastrami, Levin’s Euro-centric affections are next best expressed through The Refuge’s selection of Belgian beers, with roughly 20 offered on draft at any given time. Selections from breweries such as La Trappe, St. Bernardus, and Kerkom make regular appearances. You can also opt for a Belgian-style beer from a regional microbrewery.
