When Geir Simensen began working for his mother at Scanway Catering, one of Halifax's most prestigious culinary brands, he was eager to live up to the reputation his family started building in 1981. Not only did he start pitching in around the kitchen at the age of 14, but the Culinary Arts grad eventually honed his skills at resort kitchens around the world, including the Four Seasons Vancouver, Regent Taipei, and Hyatt Regency Cayman Islands.
Geir brings that international flair to his award-winning menus at Saege Bistro, on which you can find anything from a Nova Scotia lobster roll to vegetable ceviche and goat-cheese gnocchi. Many of the dishes are celiac-friendly, including a barbecue-duck pizza on gluten-free crust. The dishes are presented as beautifully as the dining room, a solarium with outdoorsy touches such as a stone fireplace, trickling waterfall, and breathable oxygen.
